▼  The list of Latin America's 50 Best Restaurants  2019was revealed today at the seventh annualLatin America's50 Best Restaurants awards ceremony, sponsored by S.Pellegrino &Acqua Panna, held at Usina del Arte inBuenos Aires, Argentina. With seven new restaurants and entries across eight countries, the 2019 list reflects the diversity of the ever-evolving Latin American gastronomic scene.
Maido inLimatakes the No.1 spot for the third consecutive year, retaining its status as The Best Restaurant inLatin America. Maido, or 'welcome' in Japanese, is the flagship restaurant of chef Mitsuharu 'Micha' Tsumura, serving inventive tasting menus of Peruvian-Japanese bites such as fish hotdog and sea urchin rice, alongside à la carte options and a classic sushi counter.
Three-time former winner Central lands at No.2. Pujol, inMexico City, is ranked at No.3, followed byDon JulioinBuenos Airesat No.4 and Boragó inSantiagoat No.5 – receiving the titles of The Best Restaurant inMexico,ArgentinaandChile, respectively.

This year,Latin America's50 Best Restaurants features seven new entries: Kjolle, Pía León's rising restaurant based inLima, receives the Highest New Entry Award, occupying the No.21 spot on the list. De Patio inSantiago, Chileenters the list at No.34; Mil in Cusco,Perusits at No.36; La Docena inMexico City'sPolanco district occupies No.38; while Manu in Curitiba,Brazilenters the list at No.42. The seventh new entry is Mayta fromLima, Peruat No.49.

With a career of more than 20 years,Mexico'sking of chocolate is a master of precision and flair. He has travelled all over the world, winning the Mexican leg of the World Chocolate Masters in 2010 and 2012 and going on to compete at the global championships inParisin 2011 and 2013. He has also written theLarousse Chocolatecookbook, a complete compendium of recipes such as blackout cake with earl grey and caramel bonbons, as well as the history and significance of chocolate in Mexican culture.
*.Tomás Kalikaof Mishiguene inBuenos Airesis honoured with theChefs' Choice Award, sponsored byEstrella Damm. Determination and self-realisation from his humble beginnings as an aspiring chef inIsraelhave contributed to Kalika receiving the only prize voted for by the chefs from restaurants on theLatin America's50 Best Restaurants current list. Mishiguene serves a modernised brand of traditional Jewish cuisine set to an atmosphere of live music and an open parrilla grill.
*.In its second year,The Sustainable Restaurant Award 2019recognises the establishment in the list that achieves the highest overall sustainability rating, as audited by Food Made Good Global. This year,CentralinLima, Perureceives the honour. By streamlining theirLimaprojects, chef-owners Virgilio Martínez and Pía León have been able to make Central the most sustainable ofLatin America's50 Best Restaurants, with a 98% mark in the 2019 assessment by Food Made Good Global. For Central, sustainability starts and ends inPeru: from piranha fish to pumpkin, cacao to choclo corn, every ingredient comes from a different part of the country.
*.TheArt of Hospitality Award 2019, which recognises excellence in restaurant service and dining experience, is awarded toLasaiinRio de Janeiro, Brazil. The restaurant itself is very much the product of the partnership between chef and co-ownerRafa Costae Silva and his wifeMalena Cardiel. Cardiel runs the small but elegant dining room, ensuring that Costa's plates are enhanced through knowledgeable service, exquisite drinks pairings and creating that all-important atmosphere of conviviality.
*.Finally, and occupying No.14 on the list ofLatin America's50 Best Restaurants,AlcaldeinGuadalajarais awarded with theHighest Climber Awardafter climbing 17 positions from No.31 last year. In the five years since its opening, Alcalde's star has quickly ascended, winning the One To Watch Award inLatin America's50 Best Restaurants 2016 and entering the list in 2017 as Highest New Entry. Chef Francisco 'Paco' Ruano's down-to-earth Mexican cooking in a stylish, welcoming setting features dishes such as green aguachile with prawn and apple, octopus with recado negro sauce and suckling pig with black mole sauce.

Latin America'sBest Female Chef 2019was presented to chefCarolina Bazán, owner of Ambrosía and Ambrosía Bistro inSantiago, Chile. Now in its seventh year, the award aims to support and promote inclusivity in the culinary sphere and provide the opportunity for female role models to inspire future generations of young women both in the kitchen and beyond.
Pedro Miguel Schiaffino, chef and owner of Malabar and Ámaz restaurants inLima, Peru, took home theAmerican Express Icon Award, which celebrates an individual who has made an outstanding contribution to the restaurant industry and has used their profile as a chef to raise awareness and drive positive change.
Celele,helmed by chefs Jaime Rodríguez and Sebastián Pinzón inCartagena,Colombia, was honoured with theMiele One To Watch Award– presented to an emerging restaurant with the potential to rise into theLatin America's50 Best Restaurants ranking in future years.
How theLatin America'sBest Restaurants list is compiled:
TheLatin America's50 Best Restaurants Academy is comprised of more than 250 regional voting members, each of whom is hand-picked for his or her expert opinion of the Latin American restaurant scene. The votes of this Academy make up theLatin America's50 Best Restaurants list, an annual barometer of taste. The Academy is divided into four regions:Mexico&Central America,South America(North),South America(South), andBrazil. Each region has an Academy Chair and 62 other voting members, made up of journalists, food critics, chefs, restaurateurs and well-travelled gourmands. Each member submits 10 votes on what they consider their best dining experiences of the previous 18 months; at least four of those votes must go to restaurants outside their own country.
